Hey there!Yo! Get ready for this- Swiss Roll Cake! This my third post since my mother left for America, so I'm taking care of the birdies and kitties ;)
1 cup sugar
1 1/2 cups flour
6 tbsp jam
Beat together the eggs and sugar with an electric beater on high until very fluffy, about 10 minutes. SLOWLY sift in the flour VERY LIGHTLY and fold in gently. Line a swiss roll tin or cookie sheet with foil. Pour in the batter and bake at 350 F or 180 C until a toothpick poked into the center comes out clean. Let it cool completely. Trim the sides so you get a perfect rectangle. Spread on the jam. Carefully roll up. Sprinkle on icing sugar as a garnish.
