As I said, a series of recipes- starting with a classic. Funfetti cake!
1 1/4 cup white granulated sugar
1 cup softened or room temperature butter
4 cold egg whites with no trace of yolk AT ALL
1 tbsp baking powder
2 tbsp vanilla extract
1/2 skimmed milk
5/8 cup small nonpareil sprinkles
2 1/2 cups all-purpose flour
In a cold, clean bowl, whip the egg whites with an electric beater on high speed until they form peaks. Set aside.
In a large bowl, cream the butter and sugar in a bowl with the beater until light and fluffy. Add the vanilla, baking powder, salt, and skimmed milk. Sift in the flour. Fold in the whipped whites and nonpareil sprinkles.
Preheat the oven to 180 C (350 F). Grease and flour two 9-or-10" round cake pans. Divide the batter evenly between the two pans. Bake for 10-20 minutes or until a toothpick poked in the center comes out clean. Let cool completely and frost with vanilla buttercream frosting.
