Perfect Chocolate Cake

   Hey! Great to post again. Sorry that I forgot to post yesterday; I had waaaay too much homework! Whoa, whoa, whoa! Gotta put a speed bump there. And I'm math prefect. And in a play.
   So, I guess that's my school life for ya ;). 
   Now onto this new post. A perfect chocolate cake. I decided to post this because my birthday is soon, November 14th.
A chocolate cake iced with coffee frosting.
Perfect Chocolate Cake
Makes one 2-layered cake
Ingredients
For the cake:
1 1/2 sticks (3/4 cup) room temperature (preferably unsalted) butter or canola oil
3/4 cup granulated sugar
3/4 cup packed very dark brown sugar
1 cup sour cream or heavy cream + 1 T vinegar
1 T vanilla extract or vanilla essence 
2 eggs
3/4 cup natural cocoa powder
1 cup boiling water
1 1/2 cups flour
1 tsp salt
1 1/2 tsp baking powder
For the coffee frosting:
1 1/2 cup unsalted butter, at room temperature
4 tbsp milk
4 cups icing sugar
2 tbsp VERY STRONG brewed coffee

Method
Cake:
Dissolve the cocoa in the hot water, set aside.
Cream the first 6 and last 2 ingredients in a bowl.
SLOWLY add the HOT cocoa mixture into the bowl and mix well.
Sift in the flour and fold in.
Preheat your oven to 350 F/180.
Divide your batter evenly among your two GREASED  cake pans.
Bake until a skewer inserted into the center of the cakes comes out completely clean.
Allow them to cool completely.

Frosting:
Beat the butter until it turns creamy and white.
SLOWLY add in the icing sugar and coffee.

Decorate the cake however you want!
